Hiiiiiiiiii!
How are y'all? I'm doing well and Grace is too. This post is dedicated to Julie, first commenter on "April Update"! Love ya Jewels! I know she has been waiting for a new post so she can read it. So, without further ado, CHIA SEED PUDDING!!!! I know what you're thinking. "Ew with a capital E". I thought so to until I tried it. The chia seeds make it like tapioca and the vanilla makes it well, vanilla-y. This is super easy and SUPER filling. Just a couple of spoonfuls and you will be full. Now, as you know, my lovely mother is for health food more than junk food so this was her idea. Ok, let's move on to ingredients!!!!
Ingredients:
1 cup almond milk (actually, it works with any milk)
1/2 a tsp vanilla
2 tsp agave
1 tbsp coconut shreds
1/4 chia seed
Fruit
Steps:
1. Measure out 1 cup of milk and pour into the cup
2. Add the chia seeds and stir
3. Drop the vanilla, agave, and coconut in
4. Now the chia seeds have to soak up the milk so if your pudding is liquid, good, it should be runny. Set your cup of pudding in the fridge for about an hr.
5. When it is thick and the chia seeds a bubble looking, add the fruit and ENJOY!!!! ( it tastes really good with mangoes)
You can make this at night and eat in the morning on the run, for dessert, or for a snack! ENJOY!!!!!!!!!!!!!!!!!!!!!
