Hey guys! It's Grace. Faith and I miss posting so much. I will try to post as often as possible. But, as long as I'm here, I'm going to share my absolute favorite cookie recipe. So just click that link to see the original. You can check that out, except I have my own recipe to share with y'all. I love it so much, so yeah. This recipe is like chewy and crispy on the edges with the perfect sweetness to it. Here we go! By the way, I'm gonna separate the ingredients into the order I mix them.
You're gonna need:
- 1 cup of softened unsalted butter (If you forget to leave it out, put your butter in a small bowl and microwave for about 10-15 seconds)
- 1 cup of white sugar
- 1 cup of packed brown sugar (light or dark)
- 2 large eggs
- 2 teaspoons of vanilla extract or vanilla bean paste
- 1 teaspoon of baking soda dissolved in 2 teaspoons of hot water
- 3 cups of flour
- 1/2 teaspoon of salt
- 2 cups of chocolate chips (I like semi-sweet)
Ok, so those are the ingredients you're going to need. Preheat your oven to 350 degrees (fahrenheit) The first thing you're gonna do is cream the butter and sugar. I do this in an electric stand mixer (such as a kitchen aid). Then after about 3 minutes, crack in your eggs, and pour in your vanilla, and the baking soda/water concoction. Let it mix on medium to low speed until fully combined. As for the dry ingredients, you can put them all together in a bowl and whisk. OR, I just pour in 1 cup of flour, then the salt, then the rest of my flour. (Reducing dishes I have to wash) ON LOW SPEED. Otherwise you end up with a mess. Once all of your dough is fully combined, pour in your chocolate chips. Now, you can either fold them in with a spatula or just use the electric mixer, like all the rest of it is done. Finally, bake right away or freeze. You do not have to chill this dough (although I put it in the fridge while one batch is in the oven). Depending on the size, bake at 350 for 10-12 minutes, or less if you like a softer cookie (I like them crispy).
FREEZING: If you are going to freeze the dough, you have to scoop it out onto a tray and stick in into the freezer, then into a resealable bag. Or, you can roll it up in plastic wrap and just cut them up when you're ready to bake. Tip: Bake cookies for an extra 2-3 minutes if you're taking the dough straight out of the freezer.
